Finn's believes that clean tastes and fresh uncomplicated flavours rule. The food can be a picture on a plate – but only in the sense that what you see is what you taste, because no frills or artifice should get in the way.

Food of the sea imposes discipline in uncomplicated presentation, for its beauty is in natural austerity: a lobster simply dressed with olive oil and a rub of chilli: a skewer of monkfish and king prawns chargrilled to perfection. A plate of brilliant hand dived scallops just pan fried can be perfect, glistening with olive oil and splashed with lemon.

All that is on the plate is to be eaten.
